QMEAT: Development of a machine to determine WHC in meat products at industrial level


An industrial version of QMEAT technology has been developed. The system is able to inspect pork meat pieces at a 500 pieces / hour. The system also includes a dynamic weighting system. The system is being calibrated at laboratory scale for different meat cuts (ham, loins, coppa, fiocco) and will be tested at industrial level in the following months.

An initial test has been carried out at IRTA with 24 fresh hams. Drip loss characterisation has been made using bag method and the QMEAT industrial system was able to provide a prediction coefficient of R2=0.72, RMSE=0.004.
